This gorgeous pineapple smoothie packs a serious nutritional punch as well as giving you a sugar replacement hit.
The oats and linseeds give you healthy fats and fibre. The pineapple gives you a healthy dose of Vitamin C and the spinach gives you a whole host of minerals and antioxidants including:
- Vitamin C
- Vitamin K
The Vitamin C and the minerals in this smoothie are a great boost to anyone who needs to rehydrate and help their body heal.
This recipe serves two.
200g pineapple, peeled, cored and cut into chunks
small handful of mint leaves
50g washed baby spinach
2 tbspn linseeds
handful unsalted, unroasted cashew nuts
fresh lime juice to taste
Put all the ingredients in a blender with 200ml water and process until smooth. If it’s too thick, add more water until you get the consistency you like.
